I love this cake too! I don't usually like oil in cakes, but it's so cool how it works so well in this cake. SMBC is one of my favourite frostings. I love how smooth and melt in your mouth the texture is. You should try Cassie's from How to eat a cupcake, a lot of bloggers love her version.

I'm so glad everyone enjoyed the cake. This cake is relatively low in fat compared to others so I probably wouldn't not use applesauce or yogurt.

Thanks for the link back!

I am not a fan of banana bread either. But use the nutmeg. It makes everything taste better. I have a nice nutmeg grinder, indispensable in my kitchen.

Thanks, dear. I thought about buying some mini pans a while back and decided against it. Sadly, that means I can't bake lunchbox-sized pound cakes for us to take to work with us... maybe that's enough to convince the husb to buy them for me. :) (Or maybe I'll just have to break down and bake them in cupcake form.)

Your pound cake looks awesome, so beautiful. And it reminds me that I will have to bake pound cake. I saw some mini pound cake tins and they look so cute. :)
